The Enemy of Fresh Roasted Coffee: CO2 vs. Oxygen

Freshly roasted coffee beans are practically alive. For days—and sometimes weeks—after roasting, they release significant amounts of carbon dioxide (CO2). This natural process is called "degassing."

If you seal freshly roasted beans in a completely airtight container without a valve, the building CO2 pressure will cause the packaging to bloat and eventually burst. On the other hand, if you leave the container unsealed to let the CO2 escape, ambient oxygen will rush in. Oxygen causes coffee oils to oxidize, turning your premium beans stale and bitter in a matter of days.

The solution? A mechanism that lets CO2 out but keeps oxygen from getting in.

What is a One-Way Degassing Valve?

A one-way degassing valve is a small, precision-engineered plastic or bioplastic disc embedded into the wall or lid of the coffee packaging. It acts as a one-way door.

Inside the valve, there is typically a thin rubber membrane coated with a microscopic layer of viscous sealing fluid (oil).

  • When pressure builds up inside the tube: The CO2 pushes against the rubber membrane. Once the internal pressure exceeds a certain threshold (usually around 2-4 millibars), the membrane lifts slightly, allowing the CO2 to vent out into the atmosphere.

  • When the pressure drops: The membrane snaps back into place. The sealing fluid creates an absolute barrier, preventing any outside air (oxygen) from entering the tube.

Do degassing valves expire?

The valves themselves have a shelf life of several years if stored in a cool, dry place before manufacturing. Once applied to your coffee tubes, they will outlast the shelf life of your roasted beans.

Do I need a valve for ground coffee?

It depends on when you grind it. If you grind the coffee immediately after roasting, it will release CO2 very quickly. In this case, a valve is still highly recommended. If you let the beans fully degas before grinding and packaging, you might be able to use a completely sealed foil-lined tube without a valve.
